Now for these delicious, minimal ingredient PEANUT BUTTER COOKIES which we made in a snap using ingredients on hand... find the full recipe below! 


Makes 9-12 cookies 

Gluten free : Vegetarian 

1 egg

3/4 cup all natural peanut butter 

1/2 tsp vanilla extract

3 tbsp coconut sugar 

1/2 tsp baking powder 

pinch iodised sea salt 

Heat oven to 160C and line a baking tray with greaseproof paper. In a bowl whisk the egg, then add remaining ingredients and mix. Measure tablespoons, roll into a ball and then place onto the tray (we made 9 here but they are more than a tbsp) and press down lightly with the back of a fork. Bake for 10-12 minutes, cool on tray and enjoy!
