MUSHROOM CHICKPEA PASTA
Serves 2
Gluten free : Dairy Free : Vegan

2 tablespoons (40ml) extra virgin olive oil
3 cloves garlic, peeled and sliced
200g mixed gourmet / exotic mushrooms, cleaned and sliced
200g white cup mushrooms, cleaned and sliced
pinch chilli flakes
1/2 teaspoon lemon zest
2 tablespoons chopped fresh parsley
1/4 cup (36g) chopped walnuts
2 cups (60g) baby spinach
1tbsp nutritional yeast
250g chickpea pasta

Bring a large pot of water to the boil and cook pasta according to packet instruction. Heat frypan on medium heat, add olive oil and garlic and saute for 1 minute. Add mushrooms, chilli and lemon zest and cook for 5 minutes, stirring frequently. Add parsley, walnuts, baby spinach and nutritional yeast and cook a further 2-3 minutes or until spinach is wilted. Drain pasta but reserve a touch of liquid to help toss the pasta through the mushroom sauce. Toss all ingredients together and serve.
