Healthy hormones Beetroot Lentil Barley Green Salad

This delicious salad combination is a rich source of iron, folate, magnesium, omega 3 fatty acids, nitric oxide, prebiotic fibre, vitamin D, choline, quercetin, zinc, slow burning whole food carbs and protein .. wowsa that was a mouthful… and it is both nutritionally and physically in all the right ways!

When we share recipes with you know that when we create them there is SO MUCH consideration for every ingredient in the dish. We share this one to support healthy hormone balance in women/those with a uterus, it’s also pregnancy friendly.

2 big handfuls baby spinach
1/2 cup cooked lentils
1/2 cup cooked barley (or quinoa/buckwheat/brown rice)
1 tbsp finely chopped red onion
1 tbsp currants
2-3 small roast beetroots
2 tbsp fresh chopped herbs of choice
1 tbsp walnuts crushed
2 boiled eggs
Dressing: drizzle extra virgin olive oil, big squeeze orange, drizzle pomegranate molasses

Combine all ingredients in a bowl. Drizzle with dressing ingredients. Season with iodised sea salt and black pepper and tuck in!
