FRESH OYSTERS WITH GRAPEFRUIT AND PICKLED ONION

Fresh oysters FTW for fertility! We love oysters as a delicious, and feels a bit indulgent, fertility food rich in zinc. Zinc supports cell division and growth, sperm quality and motility, immune function and a zinc rich diet has been shown to have favourable conception and pregnancy outcomes. Enjoy in your preconception phase and post birth to replenish zinc stores.

 

Makes 6 oysters 

Gluten free : Dairy Free

6 freshly shucked oysters 

1/4 fresh ruby grapefruit 

black pepper 

 

Pickled onion:

1/4 cup apple cider vinegar

1/4 cup boiling water

1 teaspoon raw sugar

1/2 small red onion, peeled and finely diced 

 

To make pickled onion: Combine apple cider vinegar, boiling water and raw sugar in a heat proof container or bowl, mix, then add red onion and set aside to pickled for 20 minutes (more if possible). Store in an airtight container in fridge up to 2 weeks. 

 

To serve the oysters, clean any broken pieces of shell from the oysters and finely diced ruby grapefruit, removing any pith. Top each oyster with 1/2-1 teaspoon each of the ruby grapefruit and pickled onion. Season with black pepper and serve.
